I made this recipe tonight and used the biscuit recipe for the dough, but I found that the dough did not stick together as well as I wanted to when rolling it into a log. Due to my issue with the dough on Sunday I will attempt it again but use the pizza dough recipe witch I have shared with you again. The pin wheel recipe and the biscuit dough recipes are from a book titled "Special Foods for Special Kids".
Very first thing pre-heat oven at 450
Biscuit Dough Recipe:
1 3/4 cups of GF/CF all purpose flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
3 Tbsp. chilled gf/cf margarine
2 Tbsp. vegetable shortening
2/3 cup of water
Sift together flour, salt, baking powder, & baking soda. Cut in chilled margarine using a pastry blender or 2 knives until consistency of small beads. Form well in center of mixture. Pour water into well & mix to form dough. Turn dough onto lightly floured board and kneed for approxiamtley 30 seconds.
Pizza Dough recipe minus the cooking:
2 cups of GF/CF flour blend
1 1/2 tsp baking powder
1 tsp xanthan gum or 1 1/2 tsp of guar gum
1 tsp salt
1 tsp Italian herb mix
1 cup of water
2 tbsp olive oil
Preheat oven to 400 degrees. Smear pizza pan w/ oil and set a side. In a bowl sift together the dry ingredients until wel blended. Make a well in the center. Combine water and oil and pour into the well. Mix w/ fork until blended and mixture comes away from sides of bowl. Turn dough onto pizza pan. Sprinkle with a little flour over the dough to keep hands from sticking.
Chicken or Hamburger Pin Wheels:
"biscuit dough or pizza dough" (your preference on which one)
3 cups of cooked ground chicken or hamburger meat
1/4 tsp. garlic powder
1/4 tsp. onion powder
salt & pepper for taste
2 Tbsp. melted gf/cf margarine
1 Tbsp. chopped parsley or parsley flakes
1/8 tsp. paprika
As stated earlier pre-heat oven to 450. Season ground chicken or hamburger meat with garlic and onion powder, salt & pepper, & set aside. Divide dough into 2 equal parts. Roll out one portion of dough to form a rectangle, 1/8 inch thick. Brush with 1/2 Tbsp. melted magarine. Sprinkle dough with 1/2 Tbsp. parsley. Spread with 1/2 of meat mixture to with in 1 inch of edges. Roll to form log. Moisten the ends with water & pinch lightly to seal. Sprinkle with paprika. Cut 1 inch thick slices & place on greased cookie sheet. Brush with 1/2 Tbsp. melted magarine. Repeat with remaining dough and ingredients. Bake for 15 minutes and serve.
I used a GF/CF friendly ranch and bbq sauce to dip these in. They were really good. I hope you enjoy.
