This recipe is very easy to make and very good
Ingredients:
-16 oz. package of GF/CF elbow macaroni (I used rice pasta)
-2pkgs shredded Daiya Cheese or GF/CF cheese (I use one pkg of cheddar & one mozzarella)
-2 1/2 cups of unsweetened coconut milk
-1/4 teaspoon black pepper
-salt to taste
Directions:
1. Preheat oven to 350 degrees.
2. Cook pasta about 5 minutes until it's just barely tender. Don't cook it all the way or it will fall apart in the oven.
3. Drain pasta and transfer it to a glass baking dish.
4. Bring the coconut milk to a low boil.
5. Add the cheeses, pepper, and salt to the warmed milk. Allow everything to melt, all while stiring constantly so it won't burn.
6. Pour the melted milk/cheese mixture into the pasta and mix well.
7. Put in the oven for 30-35 minutes or until the cheese is bubbling.
8. Enjoy!
