Feeding On The Go
** Sorry I have not posted in a while. Major's aggression and the fact that the school year is coming to an end as created little free time for the computer or my blog. Things are coming together and are slowing down so I will be posting more often.**
Major goes to a respite home twice a month for 3 days and 2 nights each time. Respite unfortunately is unable to provide for the majority of his GF/CF diet, so the rest is left up to me to provide them. I came up with a system that makes it easier for me to provide the 6 to 8 meals and his snacks. I'm blogging about it, because I believe you can adapt it for any occasion that you need to provide meals for your GF/CF child.
I start out a couple of days before his trip by planning out the menu. Next I make sure I have everything for those meals and snacks. If I need anything I make it. Then I get 6 to 8 large baggies (depends on the length of the trip). I label each bag with the corresponding day and meal. Next I place the food and drinks in the corresponding baggie. I also have a large baggie for snacks which I fill with GF/CF snacks. I then double check the baggies against my menu to double check and make sure I have everything. Finally I place all the baggies in a large insulated tote, that will keep everything cool for transport to his respite house. I also include a menu for the staff at the respite home. Initially it took me a while to get this a system down but this one works for me.

Awesome Chicken Nuggets
I have tried another recipe before for chicken nuggets but the breading did not work as well. This recipe on the other hand turned out awesome. I found this recipe at: http://www.glutenfreeda.com/recipe-print.asp?rcat=17&rid=1559
Ingredients:
-2 chicken breasts, skinless & boneless
-1/2 cup gf flour
-1/3 cup corn meal
-1 tsp. baking powder
-1 Tbsp. sugar
-1 egg
-1/3 cup of gf/cf milk
-salt to taste
- 1 Tbsp. canola oil ( I used vegtable oil)
-Peanut oil for frying (I used vegatable oil)
Directions:
Cut chicken into 1/2 inch pieces.
In a shallow bowl, combine gf flour, corn meal, baking powder and sugar.
In a seperate bowl combine egg, milk, and oil.
Add wet ingredients; stirring until well blended.
Heat a large, heavy and deep frying pan over high heat; adding about 1'' oil. When oil is hot reduce heat to medium- high.
Sprinkle chicken with salt. (I also used an italian seasoning)
Roll chicken pieces in batter until completely coated.
Carefully fry chicken pieces in oil, a few at a time, turning with tongs. When chicken nuggets are nicely brown and cooked through remove to a paper towel. repeat until all chicken nuggets are cooked. Serve immediately.
This turned out awesome and the whole family enjoyed it.

Pamela's Chocolate Brownies GF/CF
I got this recipe off the back of a bag of Pamela's GF/CF Chocolate Brownie Mix. There are several recipes but I chose this one because it sounded most intresting.
Oil-Free Brownie Recipe:
Ingredients:
-1 bag of Pamela's Brownie Mix
1/2 cup of applesauce
1/4 cup water
1 large egg
Mixing & baking directions:
Yield: one 8" or 9" inch square pan. Preheat oven to 350 degrees. Lightly grease pan. Slowly combine all ingredients enough to incorporate, batter will be thick. Do not over mix. Pour into pan, smoothing evenly to edges. Bake for 18 mins, or until toothpick inserted into middle of brownie comes out with slight crumbs. Some recipes need a little extra baking time. Do not over bake.
